This member of the sunflower family is grown and prized as a root vegetable. The cylindrical tubers resemble ginger root, with a knobby, irregular surface and are typically 7 to 10cm long. Jerusalem artichokes are rich in inulin, a type of soluble fiber that promotes gut health and supports blood sugar control. The taste is slightly nutty, sweet, and earthy. Jerusalem artichokes have a crunchy texture when eaten raw in salads or a creamy texture when cooked. They can be roasted, sautéed, boiled, or mashed, similar to potatoes.

Jerusalem artichokes require little maintenance and are hardy plants that can thrive in a variety of soil types, including poor soil conditions. This high yielding variety produces an attractive stand of plants 1.5 to 3m high with flowers that are similar to sunflowers, the tubers (the edible part of the plant) grows beneath the soil.
